免烘蛋挞 Non-baked Egg Tart

今天“又”心血来潮
想来一些“小挑战”
              就是...
电磁炉(Induction Cooker)蛋挞


我们的完成品^.^
平时,我们在网站看到的,
多数是用烤箱弄成的,
因为我们家没有T.T
所以呢..
我们只好用这个方法了...

材料如下:
蛋挞皮(现成)Pastry Puff (Kawan brand)
淡奶油180g Whipping Cream (Anchor brand)
牛奶140g Milk (Dutch Lady)
细砂糖80g Sugar
蛋黄4粒 Egg Yolk
低筋面粉15g Cake Flour
炼乳15g Evaporated milk(F&N)
蛋黄1粒 (刷塔皮) 1 Egg Yolk for brushing tart skin

方法如下:
Process:
1.淡奶油、牛奶、炼乳倒入小锅里,然后慢慢将糖放入锅里,用小火煮至糖溶化同时慢慢搅拌。
Put Whipping cream, milk, evaporated milk and sugar into a bowl stirr evenly. Then, using low flame to make sugar dissolve.


2. 待step 1的“混合物”冷后,加入蛋黄与低筋面粉入step1的小锅里搅匀。
After the bowl cold, add egg yolk and cake flour into the bowl (step 1)and stirred evenly.
过后,用筛子过滤渣物(建议过滤两次),然后放在一旁.
Then, filtrate the mixtures by using griddle (recommend 2 times) and set aside.


 3. 拿出一片塔皮(现成的),用模具压出形状,然后按压入模具。(如下图)
Take out a piece of pastry puff, use tart mold  pinching-out a shape as the following.




4. 用预先准备的蛋黄,刷在塔皮上,倒蛋挞液入蛋挞皮,然后拿去“烘”。
Brushed egg yolk on tart skin, pour tart liquid into tart skin then put on the pan for "baking".
*放油在底部(我用玉蜀黍油)然后盖起来烘大约20分钟。(电磁炉的800度)
*Put corn oil on the bottom, then cover it for baking about 20min (induction cook: 800 Celsius)

成功了!虽然卖相不好XD
不过,真的有脆皮的感觉...好吃...
